The Olive tree has for centuries been a symbol of the Sicilian agriculture of Chiaramonte. Therefore, olive oil production has always been a natural expression of this extraordinary land. Why natural? Simply because it is the product of our ancetors' methods, taught from generation to generation.
Chiaramonte Gulfi
The city of Chiaramonte Gulfi, located on a hill near mountains that are covered with conifers and eucalyptus, is situated in the eastern part of Sicilia, about 19 kilometers from the county town Ragusa. Created in 1300 by the Chiaramonte family, it is for more than 7 centuries the native land of a tasty culinary tradition. There, olives have always been the largest and most-liked fat for local and mediterranean cooking. With their precious juice, they give a holy touch to all dishes.

Mario Castagna and Toni Vincenti, both being rare traditional products fanatics, bought a three hectares property with 56 olive trees. Half of those are more than eight hundred years old. Their "Tonda Iblea" olives give a fruity oil with intense flavours, harmoniously spicy and slightly bitter. gusto.
The yield is very low, about 9%, because of the decision to pick olives at the right moment and precisely when they are completely mature. Moreover, the crushing is made right after the picking, by hand, in a granite millstone, by cold extraction. All this is aiming at preserving the delicate characteristics of the oil: less than 0,4 acidity and typical color.
