Lardo of Colonnata

The lardo of Colonnata is a traditional product of Colonnata, a small city of Toscana situated near marble deposits around Carrara. Its maturing takes from 6 to 10 months in special marble vats that are located in caves digged into rock. The natural humidity of those caves as well as the porosity of marble make ideal conditions for the maturing.

It is very fragrant but with a delicated taste, almost sweet. Herbs and spices that are added during the maturing process make the lardo exceptional. Tastiest if it comes from the upper part of the pork’s leg.
